My Mom's Meatloaf

I love my mom's meatloaf so i got the recipe tonight so i could share it with you!


INGREDIENTS:
2 lbs ground beef
3 eggs
1/4c ketchup
2TBSP worcestershire sauce
1 1/2c italian breadcrumbs
1TBSPgarlic powder
1 small onion grated (i use microplane so the onion juice goes in!)

Preheat oven to 350
Mix all ingredients together (use your hands! but wear gloves,ground beef feels like it never comes off your hands)
Form into a meatloaf
Cover the top with ketchup and sprinkle garlic powder and italian seasoning over the ketchup
optional: chunk 2 onions and put around the meatloaf
Bake for 1 hour or until cooked through

Crockpot Chicken Cacciatore



Preheat crockpot on High setting and add following ingredients for sauce:

3 cans Tutturosso ( or your favorite brand) crushed tomatoes
2 cans Tutturosso (or your favorite brand) tomatoe puree
3 tablespoons each of:  garlic powder, italian seasoning, dried basil, sugar, fresh parsley (flat leaf italian has more flavor)
 
**You can also use your own "homemade" pasta sauce (gravy!) recipe for this.  

If you like onions, add as many as you want (we use 4-5 med. onions) quartered into the sauce.

Preheat non stick pan and add about 1/2 to 1 inch of oil (enough to fry your chicken thighs in)

Again, use as many chicken thighs as you want to or will fit into your crockpot; we used 12.

Rinse and pat dry chicken thighs and sprinkle both sides with pepper, garlic powder and italian seasoning.  Brown on each side, about
4-5 minutes each side.  Add browned thighs to crockpot of sauce and cook on High 6-7 hours.  

If you like mushrooms, when there is about 1 hour left of cooking time, clean and slice up white button mushrooms (not too thin though) and
add to crockpot.

Serve with your pasta of choice, a nice tossed salad and some good italian bread!  Enjoy!!

Crockpot Raisin Bread Pudding

This is my recipe adapted from Fix it and Forget it.



1 loaf of raisin bread (i use it fresh from the bakery and let it sit a couple days in the bag)
6 eggs
3 cups milk
1/2 cup sugar
6TBSP melted butter
1tsp cinnamon
splash of vanilla


Rip bread into pieces. I ripped mine fairly big to have a heartier pudding.
Beat eggs and milk. Stir in sugar, butter, vanilla and cinnamon.
Pour over bread and mix with your hands.(i wore gloves)
Cover and cook on high for 1 hour
Turn to low and cook for 3-4 more hours until done.

*This got amazing reviews from my parents! I loved it. I prefer my breadpudding cold so i would let it cool before eating. But it all depends on your liking. Enjoy!!

Creamy Crockpot Pork

Adapted to our liking from this recipe

5 lb pork roast
1 onion chunked
1 family size can cream of mushroom soup
2 small cans cream of celery soup

First i put the pork in the crockpot and let it cook a couple of hours and then used the turkey baster to suck out some of the drippings.
Then add the onion and mix together the soups and pour over the pork.

This cooked on high for 3 hours and low on 4-5 hours until the pork was fall apart tender.


Whole Chicken in the Crockpot

I got the idea for this here but added my own spices.


The chicken was 7lbs. The night before the chicken was washed and we added salt, pepper, garlic powder and italian seasonings. Put the chicken in the crockpot insert and covered it and put it in the fridge. The next morning all that needed to be done is to pop the insert into the crockpot and turn it on!
cooked on low for 7-8 hours i believe. The pop up timer popped up earlier but we kept it on anyway while it cooked in its juices.then turned it on serve/warm until the sides were ready.
my mom cut into it before i had a chance to get a picture! but i must say..this was the most moist, delicious chicken i have ever had. i will never bake a chicken in the oven again!
